One of the signature dishes of Kaisers Reblaube is the natural duck liver mousse produced according to the original recipe of Peter Brunner. The special procedure is the result of vigorous try outs, where the fat isn’t fed to the animal but instead added later in the kitchen progress by adding butter to the already extracted liver.
